General Questions/New to Joomla! 5.x • How to package for customer deployment?

A reply to a recent post of mine advised that
Quickstart packages are not recommended for anything other than testing since they may (1) contain an outdated Joomla and (2) contain outdated extensions or require separate subscriptions to use them. Quickstarts are essentially for self-hosted demos, and not for production.
I can see how this could be, though my situation is maybe atypical: I host all of my customers (none of whom have admin access), so using a quickstart means that I can be 100% confident that I'm deploying a tried and tested combination of a Joomla version and extensions, and that all the documentation (which I deploy as articles) is correctly installed and cross-referenced.

I haven't re-visited this for about 5 years though and realise this may be an out-of-date approach. So what's the state of the art for installing a Joomla, configuring the admin and site themes, adding custom user groups, then 50 or so articles, with cross-references and smart search indexing done, followed by a package of components, modules, libraries and plugins?

Using the quickstart I can build a new customer cloud server in 2-3 minutes - how can I achieve this in more 'modern' ways? Maybe using the new web services APIs?
